Chocolate Eclair Recipe
2 sm. instant vanilla pudding
2 c. cold milk
8 oz. Cool Whip
Graham crackers
Pudding Mix:
Make the instant pudding according to the instructions on the box and then add in the 8 oz of cool whip.
Make a layer of graham crackers in buttered 9 x 13 inch pan. Pour 1/2 of pudding mix over graham crackers. Cover with another layer of graham crackers. Pour remaining pudding mix over graham crackers. Cover with another layer of graham crackers. Top with icing. (continued below)
Icing for chocolate eclair:
2 tbsp. cocoa
1 1/2 c. powdered sugar
3 tbsp. melted butter
3 tbsp. milk
1 tsp. vanilla
Pour over graham crackers. Chill before serving.
Note: I have made this on numerous occasions for parties and get togethers and I always take home an empty container. I usually have several people ask me for my recipe and I gladly give it to them;-)
