Caramel Apple Recipe

This is my caramel apple recipe and since many of you have asked for it I will share. Be sure and follow the recipe to the letter and if you want to close your eyes and pretend you are at the county fair then these delicious apples will sure help.

Caramel Apple Recipe

1 cup Sugar
3 TBS Light Corn Syrup
1 cup Heavy Cream
2 TBS Butter
1 tsp Vanilla
6 tart Granny Smith green apples
6 wooden popsickle sticks

Spray Pam on the surface of a wooden spoon and a medium saucepan. Add the sugar, cream, and light corn syrup into saucepan and bring to a boil over medium heat.

Stir enough to dissolve the sugar and no more.. cover saucepan and allow to boil for 3 minutes. Remove lid and use a pastry brush dipped in cool water to scrape down the sides of the pan.

Continue to boil stirring slightly to keep from scorching.. do this until the temperature reaches 305 degrees farenheit (you will need a candy thermometer). Remove from heat and let stand for 30 seconds then add butter and stir gently until dissolved.

Once the temperature gets below 270 degrees add the vanilla stirring ever so gently.

Immediately dip each apple into the caramel making sure to coat the entire apple. You can roll the apples in crushed peanuts, walnuts or pecans if you like and lay aside to cool.

This caramel apple recipe will make 6 apples.. feel free to double the recipe as these will go fast.
